The dipping sauce recipe was from my local Vietnamese shop; their sauce is also quite runny. So 1 cup water was necessary to get that and also since I prefer to use sugar, that amount of water is necessary to balance it out. But I guess thats the joy of cooking; we all customize it to our preferences. I will try out your version sometime but I dont use stevia.

This is a great base recipe, needs a few tweaks to optimise the flavour though. I make this almost weekly using rice paper instead of spring roll pastry, we love them. I add a dash of soy sauce to the filling, along with plenty of fresh garlic. I use stevia blend instead of sugar, as we are a sugar free household. For the dipping sauce I cut the fish sauce down to tablespoons, add 2 tablespoons of lime juice, stevia instead of sugar and a couple teaspoons of a mild chilli lime paste. I’m pretty sure the 1 cup water must be a mistake? Usually I add none, tonight I tried 2 tablespoons water to see if it did make the sauce any better and nope, it justs tastes watery, leave it out completely!
